Rapeseed is one of the most common oil-bearing plants in the temperate zone. From a raw material meeting domestic demands, rapeseed is gradually becoming an important export article. The use of rapeseed meal as a feed has been growing and the possibility of utilization of rapeseed protein for direct human consumption is being investigated.
Some rapeseed varieties provide oil suitable for technical purposes. However, both the oil and the rapeseed meal used as a feed have components which are detrimental from a nutritional standpoint. Consequently, considerable research has been devoted to these components.
The purpose of this book is to provide a comprehensive discussion of the chemistry, technology and methods of utilization of rapeseed aimed at obtaining economically optimal results. The work describes in detail the problems related to rapeseed and at the same time it gives an overview of the most recent results of investigations on a world scale.
