This title will be the first in an important new series of books covering analytical techniques, published by Blackwell, for the Institute of Food Science and Technology (IFST). "Determination of Animal and Plant Species in Foodstuffs" will cover methods that are used to detect the species of origin used in food products. This is important in the many cases of fraudulent substitution of lower cost species into food products, and also for moral, religious, health and food safety issues arising from consumer consumption of food products containing animal or plant material of which they were not aware.
