This work is concerned with food safety, presenting ideas on how to control bacterial colonization during propagation to ensure enteropathogen-free fresh poultry. It covers immunological approaches, competitive exclusion technology, environmental intervention and molecular genetics.
Food safety is a key issue of the 1990s and development of the ideas presented here (the effective technologies that can prevent bacterial colonization during propagation) will lead to marketing of enteropathogen-free fresh poultry which will effectively reduce an important health hazard for consumers. This health hazard, gastrointestinal human disease, is associated with consumption of foods that are contaminated with Salmonella, Campylobacter, and Listeria E. Coli. Fresh poultry is a highly publicized source of these enteropathogens.
