Lactose Intolerance

Lactose intolerance (LI) is a condition resulting from the body's inability to metabolize lactose caused by a deficiency of the enzyme, lactase. Millions across the world suffer from this condition, which is treated by avoidance of lactose containing foods, lactase supplementation, and rehabituation to dairy products. This book reviews the history of milk consumption and dairying, regulation of the human lactase gene, nutrients in milk, dietary management of LI, fermented dairy foods and LI, colon adaptation by lactose, children and incidence of LI, lactase non-persistence, and clinical treatment for LI patients.
