Nutrition in Epigenetics covers recent progress in the role that nutrition plays in the regulation of epigenetic processes and their inheritance. The first section of this book covers the fundamental principles of epigenetics; the second covers the role of nutrition in epigenetics, including maternal-child nutrition, role of specific nutrients, and nutritional epigenetics and disease; and the third presents current models being used to research the interactions between nutrition and epigenetics and the methods that are available to ascertain epigenetic changes.

Mihai D. Niculescu is an Assistant Professor of Nutrition at the University of North Carolina's Gillings School of Global Public Health in Chapel Hill, and at the UNC Nutrition Research Institute in Kannapolis, North Carolina, USA. Paul Haggarty is Head of the Lifelong Health Programme, and the Nutrition and Epigenetics Group, at the Rowett Institute of Nutrition and Health in the University of Aberdeen in Aberdeen, Scotland.
