Thierry Marx, 43, belongs to a new generation of chefs: 2 Michelin stars and Gault-Millan Chef of the Year 2006. He has also done his bit for his country, having fought in the Lebanon war; has lived in Australia and Japan; spends several months each year in Asia, as well as learning jujitsu.
