Dubbed the Champion of Champagne (and one of their 40 Tastemakers Under 40) by Wine Enthusiast, Ariel Arce is a restauranteur and owner of Air's Champagne Parlor, Tokyo Record Bar, Niche Niche, and Special Club in New York. She previously worked as the wine director of Birds and Bubbles, as well as at the cult Chicago cocktail venue, The Office at the Aviary.
