This book reviews the latest advances in mass spectrometry (MS) techniques applied to food safety and environment quality, and it discusses the recent improvements in sample preparation and MS platforms for screening of emerging contaminants. Expert contributors discuss the current applications from omics to the screening of emerging contaminants and nanomaterials in food and environmental matrices, and particular attention is given to the opportunities that MS offers for guarantying food security and promoting the sustainable use of ecosystems.

Yolanda Picó is Full Professor of Food Chemistry and Nutrition at the Department of Preventive Medicine of the University of Valencia (Spain), and at the Desertification Research Center (Valencia, Spain). Her main research focuses on the development and validation of methods of analysis for the determination of emerging organic contaminants in food and the environment, especially, those based on the application of mass spectrometry techniques. She has been working on the elucidation of the molecular structure, determination of the fragmentation mechanisms of emerging contaminants, as well as, quantification and multi-pesticides screening in food, in multi-drugs, forensic sample, among others. Professor Picó has published 260+ articles, edited 5 books on the analysis of food contaminants and their determination, and authored 20+ book chapters. She has also been involved in numerous committees for advice and as evaluator in the 5th, 6th and 7th Framework Programme of the European Union and in the 2020 Horizon.
Julian Campo is an Environmental Researcher at the Desertification Research Center (Valencia, Spain) with a Ph.D. from the University of Valencia (Spain). He has been studying the presence of emerging contaminants in food and environmental matrices, including the development of methods for their determination and monitoring (in different Spanish basins in regards to wastewater treatment plants and forest fires). Dr. Campo has published 29 articles, and contributed to 5 book chapters on this field. He has also worked with pesticides, drugs, antibiotics, perfluoroalkyl substances, polycyclic aromatic hydrocarbons, and flame retardants.
