Aflatoxins are exceptionally hazardous chemical substances produced by fungal (mould) growth on many food raw materials, foodstuffs and fodder. This report evaluates the current global situation of aflatoxin contamination of foods and dietary intakes, including data at port-of-entry.
Aflatoxins are exceptionally hazardous chemical substances produced by fungal (mould) growth on many food raw materials, foodstuffs and fodder. Th ese substances are toxic to humans and animals at relatively low levels and are potent liver carcinogens. They are widely distributed in nature, especially in tropical countries with high temperature and humidity. This report evaluates the current global situation of aflatoxin contamination of foods and dietary intakes, including data at port-of-entry. Human exposure to aflatoxins as measured by various methods is reviewed and related to the results from epidemiological studies, showing that this disease is still of public importance.

Part 1 Introduction: sources, occurrences and exposure pathways; populations at risk; effects - occupational, home; epidemiology, outbreaks of acute aflatoxicosis; experimental studies - hepatotoxicity, carcinogenesis, teratogenicity, mutagenicity; regulatory limits and guidelines; current agency programmes and activities, plus JEFCI CODEX. Part 2 Contamination of food items: sources and concentration - prevalence, post harvest, storage, commercial, processing, household; local, regional trends; ports of entry and trade data. Part 3 Dietary intake: market basket surveys; duplicate diets; ethnic groups, food patterns; feasts, fasts. Part 4 Exposure: exposure to aflatoxin; several ELISA techniques; exposure versus food contamination, epidemiology; DNA probes. Part 5 Conclusions and recommendations.
