Biofortification for Nutrient-Rich Crops
CRC Press (Verlag)
978-1-032-66727-0 (ISBN)
Biofortification is a widely accepted cost-effective agricultural strategy to improve the nutrient deficiency in populations. It is especially useful in low income and developing nations. Strategies for biofortification employ crop breeding, targeted genetic alteration, and agronomy, show promise for addressing multiple forms of human malnutrition. To increase the bioavailability of food nutrients, biofortification efforts must focus on improving the nutrient content of food and decreasing anti-nutrients.
This book covers the basics of biofortification, international efforts, challenges, opportunities, and the use of the latest omics technologies in addition to classical approaches. It covers the most studied micronutrients, vitamin biofortification, and the new topics in dietary fibers, starch quality, and phenolics. It uniquely covers the antinutrients like phytic acid, ODAP, and Glucosinolates. It also reviews food bioavailability, scientific research, and meta-analyses to assess the health-promoting efficacy of different nutrients. The book attempts to cover all bases, from decision considerations to prospects, as well as biofortification of nutrients, antinutrient reduction, and the use of latest technology to aid in the nutritional enhancement of virtually all recorded food crops.
Dr Monika Garg has been a scientist at NABI, Mohali for the past 14 years. She obtained a PhD and post-doctoral experience from Tottori University, Japan. She had also served in ICARDA, CGIAR, Syria. She has more than 70 publications in reputed journals with an h-index of 24 and served as an Editor/Reviewer for various journals. She is working on the biofortification of wheat and understanding its effect on lifestyle disorders. Her special interest lies in anthocyanin biofortified colored wheat. Dr Saloni Sharma is a postdoctoral researcher in the Department of Genetics,University of Granada, Spain. Previously she worked as an ICMR-postdoctoral fellow at NABI, Mohali. Her research is on colored wheat crop genetics, genomics, stress-responsive physiology and studying wheat biofortification. She has published more than 30 research/review articles and book chapters in reputed journals with an h-index of 16 and served as an Editor/Reviewer for various journals. Dr Apoorv Tiwari holds an M.Sc. from CSJM University, Kanpur, and M.Tech. and Ph.D. in Bioinformatics from SHUATS, Prayagraj, India. Currently working as Project Scientist at NABI. With over 50 publications in renowned journals along with editorial/reviewer roles, Dr. Tiwari's expertise encompasses crop genomics, proteomics, transcriptomics, GWAS, QTL mapping, statistical methodologies, and computer-aided drug design. His contributions have earned him recognition with the Young Scientist and Governor's awards.
