The book contains two sections – one section features principles, the other, covers applications. Part I provides information on sustainable use of nutrition and diets in health and diseases; advanced biotechnological approaches to improve nutritional content of food; trace elements in nutrition; drug and nutrient interactions; functional foods and nutraceuticals in health maintenance; and biomarkers of functional foods and nutraceuticals in health maintenance. Part II discusses the significance of nutrition in selected human diseases, including cardiovascular diseases, cancer, infection, neurodegenerative diseases, and metabolic co-morbidities. It also discusses optimal nutrition for wellness, fitness, pregnancy, mental health, aging, and longevity.

Adenike T. Oladiji is a professor of nutritional biochemistry and the current Vice Chancellor of Federal University of Technology, Akure, Nigeria. Prior to this, she held various positions and served on university committees as chairman and member. She served as the Dean of the Faculty of Life Sciences, University of Ilorin, Director of Administration of Association of West African Universities, Advisory Board Member of CG Bhakta Institute of Biotechnology, Uka Tarsadia University, Bardoli, India, and Director of Central Research Laboratories, University of Ilorin. She is an editorial board member of many scientific journals and has authored about 150 research articles and contributions to book series publication. Professor Oladiji has received a lot of awards and recognitions for her achievements and associated organizations, including Fellow of the Nigerian Academy of Science, Fellow of the Nigeria Society of Biochemistry and Molecular Biology, among others. . Johnson O. Oladele is a Lecturer at the Department of Chemical Sciences, Faculty of Science, Kings University, Nigeria. He earned a Bachelor's degree (B.Sc. [Hons]) in Biochemistry and Certificate in Entrepreneurial Education from Osun State University. He completed his postgraduate studies at University of Ibadan where he earned a Master's degree (M.Sc.) in Biochemistry & Molecular Toxicology, and PhD (Biochemistry) at University of Ilorin. He has also completed a program at Wicking Dementia Research & Education Centre, University of Tasmania, Australia; and Griffith University, Queensland, Australia. Dr. Oladele belongs to a number of national and international professional associations. He has authored many research articles published in peer-reviewed journals and chapters in book series. He serves as a reviewer for a number of journals published by Elsevier and Springer, and as an editorial board member of two learned peer reviewed journals. Dr. Oladele has vast experience in both teaching and research. As a research fellow and seasoned facilitator, he has presented papers and oral presentations in a number of seminars, workshops, and conferences. He has also received awards and honours in recognition of his efforts, distinguished service, and contributions to his career and associated organizations. Ebenezer I. O. Ajayi is the Head of the Department of Biochemistry, Faculty of Basic and Applied Sciences, College of Science, Engineering and Technology, Osun State University, Osogbo, Nigeria. He is a former sub-dean of Student’s Affairs, College of Science, Engineering and Technology. He earned his B.Sc. (2004) from the University of Ado Ekiti, M.Sc. (2008), and Ph.D. (2015) from the University of Ibadan, Nigeria. He has published 32 scientific papers, reviews, and book chapters and has served as reviewer for reputable journals. He is a recipient of many grants and awards, the most recent being a three-year postdoctoral fellowship by the Argentinian Ministry of Science, Technology, and Productive Innovation. He is the leader of the Computational Membrane Biochemistry and Bionanotechnology group with research interests in diabetes complications and infectious diseases involving wound healing using biophysical, nanotechnology and microfluidics tools.
