Quality control and standardization of methodology have become increasingly important in nutritional epidemiology studies in order to improve the comparability and compatibility between laboratory and field results. Based on two workshops, organized in collaboration with the "Group of European Nutritionists", this book sets out to be an updated manual on the methodology for nutritional status assessment. Topics discussed include the methodology of body composition, physical fitness, energy balance, lipid patterns and protein, vitamin and mineral nutrition.
Part 1 Anthropometric methodology: stature and supine length; body mass or weight; weight-height ratios; circumferences; skinfold thickness; skeletal diameters. Part 2 Body composition methodology: densitometry; dilutometry; advanced methods. Part 3 Physical working capacity and physical fitness methodology: cardiorespiratory efficiency; muscle strength; motor performance. Part 4 Energy balance: energy intake; energy expenditure. Part 5 Lipid pattern methodology: essential fatty acids by HRGC; separation and determination plasma lipids and lipoproteins; the arachidonic acid in the vascular system. Part 6 Protein nutriture methodology: indicators of nutritional status; plasma proteins; urinary creatinine; 3-methyl-histidine; IGF-1. Part 7 Vitamin nutriture methodology: vitamin A; vitamin D in serum by competitive protein binding assay; vitamin E in plasma and serum by HLPC; phylloquinone in serum or plasma; thiamin; riboflavin; niacin in whole blood and urine; vitamin B6; folic acid; vitamin B12 in serum by competitive protein-binding assay; biotin in whole blood, plasma and urine; pantothenic acid in whole blood by microbiological assay; vitamin C in plasma and whole blood. Part 8 Mineral nutriture methodology: sodium; potassium; calcium; phosphorous; magnesium; iron; zinc; copper; selenium; chromium; manganese. Part 9 Immunocompetence methodology: lymphocyte count; delayed cutaneous hypersensitivity; complement C3 and factor B; secretory IgA; T-lymphocyte and subset percentage; lymphocyte proliferation response. Part 10 Clinical nutriture methodology. Part 11 Psychometrics and nutrition: purpose and scope; fundamentals of psychological testing; types of psychological test; cross cultural assessment.
